Carmelized Pear and Gorgonzola Flatbread

Caramelized Pear and Gorgonzola Flatbread (serves 4-6)
 
1 fresh pizza crust
About 2 Tbs unsalted butter
1 large pear, sliced in 1/4” slices
 
3 Tbs brown sugar
4 oz Gorgonzola cheese
1/4 cup chopped pecans
Fresh flat-leaf parsley



Preheat oven to 425°. Roll out your dough to desired thickness and place on a baking sheet. Poke several holes in the dough with a fork and bake for 10 minutes, until halfway baked and starting to get light brown in color. Meanwhile, in a large skillet, melt the butter over medium heat. Add the pear slices and brown sugar and stir until everything is well combined. Continue to cook for 4-6 minutes, until the brown sugar has dissolved into a caramel and the pears have softened.
 
Once you pull out the par-baked crust, top with the Gorgonzola cheese. Then top with the pear mixture, followed by the pecans. Bake another 8-10 minutes, until the crust is golden brown. Remove from the oven and sprinkle on chopped parsley. Let sit for 5 minutes before cutting
