Baked Brie With Roasted Grapes and Thyme

BAKED BRIE WITH ROASTED GRAPES AND THYME (serves 10)
 
1 sheet puff pastry, thawed
1 round of Brie cheese
1 egg
3 large handfuls of seedless purple or red grapes
1 Tbs olive oil
Salt and pepper
Sprinkle of brown sugar
Fresh thyme, chopped fine
 
Preheat the oven to 400°. Lightly flour the puff pastry and roll into 1/8-inch thickness. Wrap the dough around the brie, trimming away the excess pastry. Seal the edges with your fingers and place on a foil-lined baking sheet, seam side down. Brush the pastry with the egg and bake 20-30 minutes, or until golden brown. Let rest for about 15 minutes.
 
In the meantime, turn the heat up in your oven to 450°. Toss the grapes with the olive oil, salt and brown sugar. Roast on a foil-lined pan for about 10 minutes, until the grapes have softened and most have burst. Remove from the oven, sprinkle with the thyme.
 
Spoon the grape mixture over the brie and serve with crackers or crostini.
