Energy bites are a healthy snack option perfect for busy weeks.

I consider these a good alternative to granola bars since they don’t have all of the added sugar and preservatives and kids love them!

These are super-easy to make and no baking is required.

2 cups toasted coconut flakes

2 cups old fashioned oats

2 cup craisins or any dried fruit that you like

1 cup oat bran, flax or wheat germ

1 cup sunflower seeds, soynuts, peanuts or almonds

2/3 cup honey

1 cup peanut butter or any nut butter (chunky or creamy)

2 teaspoons vanilla


Mix all ingredients together and form golf-ball sized balls. Refrigerate for 1-2 hours before serving. Store in an airtight container and refrigerate and they will keep for up to a week.

You really can’t miss with this recipe. Any of the ingredients can be replaced with other options such as almonds, soy nuts, or even dark chocolate pieces. You do, however, need to use the peanut butter and honey since these ingredients are the glue that holds everything together.
