Zucchini Fritters with Spicy Dipping Sauce

ZUCCHINI FRITTERS WITH SPICY DIPPING SAUCE (25 appetizer size)
 
Vegetable or canola oil for frying
3 cups grated zucchini
1/2 cup diced onion
2 cloves garlic, minced
2 eggs
1 cup flour
1 tsp baking powder
1/2 tsp chili powder
1 tsp salt
1/2 tsp pepper
1 cup mayonnaise
Zest of 1 lime
Juice from 1/2 lime
Your favorite hot sauce
Salt and pepper

Heat oil, about 1/2-inch deep, in a large skillet over medium heat. In a bowl, combine the zucchini, onion, garlic and eggs. In a small bowl, combine the flour, baking powder, chili powder, salt and pepper. Fold into the zucchini mixture.

Drop a small amount into the oil to see if the oil is ready for frying (make sure it bubbles nicely, but not too much). Drop the fritters into the oil, 6-7 at a time and fry until golden brown. Drain on a paper towel.

In a small bowl, combine the mayonnaise and lime juice. Season with as much hot sauce as you like, and finish with salt and pepper to taste. Serve alongside the fritters.
