Grilled Cheese Italiano

4 TBSP Mayonnaise
8 slices Italian or whole grain bread

8oz Provolone cheese
8oz shredded mozzarella cheese

8 slices proscuitto
24 fresh basil leaves
8 slices heirloom or plum tomato
Italian seasoning
salt and pepper

Heat a non-stick griddle over medium heat. Spread mayonnaise thinly on one side of each bread slice. Layer 4 slices of bread with mozzarella cheese, 2 slices of proscuitto, 6 basil leaves and 2 tomato slices. Sprinkle with  Italian seasoning, salt and pepper. Top with provolone cheese and remaining bread slices, mayonnaise side up. Griddle each side until golden brown.
