Bacon Chocolate Chip Cookies

BACON CHOCOLATE CHIP COOKIES (makes about 45-50 cookies)
 
3 cups flour
1 1/4 tsp baking soda
1 Tbs kosher salt
8 oz unsalted butter, softened
1 1/2 cups brown sugar
1/4 cup sugar
2 eggs
1 Tbs vanilla (or vanilla paste)
2 cups semi sweet mini chocolate chips
10 strips cooked bacon, crumbled
 
In a medium bowl, combine the flour, baking soda and salt. With an electric mixer, combine the butter and sugars and beat until fluffy. Add the eggs, one at a time and then the vanilla. Add the flour mixture and blend until a dough forms. Stir in the chocolate chips and cooked bacon. Chill the dough in the refrigerator for at least 30 minutes. Preheat the oven to 325° and line baking sheets with parchment paper.
 
Once the dough has chilled, roll 1 Tbs of dough into balls and flatten with the bottom of a drinking glass sprayed with non-stick cooking spray. Space 2 inches apart. Bake for 12-14 minutes, until lightly golden on the edges. Let cool on the baking sheet for
1 minute, then transfer to a baking rack.
