FRENCH ONION DIP WITH PARMESAN PITA CRISPS (serves 6-8)

 
2 Tbs extra virgin olive oil
1 Tbs unsalted butter
2  yellow onions, diced
1 Tbs dried thyme
2/3 cup Mayonnaise
1 cup sour cream
5 dashes Worcestershire sauce
5 Pita rounds
4 oz shredded Parmesan cheese
Salt and pepper

Preheat oven to 400°. Heat the oil and butter over medium heat in a large skillet and add the onions, cooking for 5 minutes. Add the thyme, sprinkle with salt, lower heat to medium-low and cook until the onions are soft and brown (about 15 minutes).
 
In a bowl, mix together the mayonnaise, sour cream, and Worcestershire until smooth. Season with salt and pepper. Fold in the onions until well combined, refrigerate for at least an hour to chill through.
 
Brush the pita rounds with extra virgin olive oil and sprinkle evenly with parmesan. Sprinkle with salt and pepper and cut each pita into 8 wedges. Place on a baking sheet and bake until golden and cheese is melted, 5-7 minutes. Serve with dip.
