Pan Seared Salmon With Garlic Roasted Broccoli

PAN SEARED SALMON WITH GARLIC ROASTED BROCCOLI (serves 4)
 
6 cups broccoli florets
4 garlic cloves, minced
1-2 tsp chili flakes (optional)
Extra virgin olive oil
Salt and pepper
1 lemon, juiced
4 salmon filets (6 oz each)
Spice rub of choice or salt and pepper


Preheat oven to 425°. In a large bowl, toss the broccoli with garlic, chili flakes, salt and pepper. Spread on a rimmed baking sheet and roast for 25-30 minutes until broccoli edges start turning brown and crispy. Remove from oven, drizzle with lemon juice.
 
Heat a large non-stick skillet over medium-high heat. Drizzle 3 Tbs extra virgin olive oil in the pan and cook both sides of the salmon for 3-4 minutes per side for a medium temperature. Serve with broccoli.
