Bourbon Maple Glazed Carrots
Yield: 8 servings
3/4 cup bourbon
6 Tbsp. butter
3 Tbsp. maple syrup
3 Tbsp. brown sugar
Salt, to taste
Black pepper, to taste
Chopped dill, to taste + additional for garnish
2 lb. carrots, peeled and sliced into ½-inch pieces
Place bourbon in a sauté pan and cook over medium-high heat until the bourbon has reduced by half, about 10 minutes.
Add all remaining ingredients except carrots and mix together.
Add carrots and toss to combine. Reduce heat to medium-low and cook until the carrots are tender but not mushy, about 15-20 minutes.
Remove from heat. Garnish with additional dill and serve immediately.
