CURRIED WALDORF TURKEY SALAD
Yield: 8 servings
Ingredients:
Dressing:
1/4 cup plain nonfat Greek yogurt
3 Tbsp. mayonnaise
2 Tbsp. honey
2 Tbsp. fresh lemon juice
1 tsp. curry powder
1/2 tsp. ground cumin
2 Tbsp. walnut or grapeseed oil
Coarse salt and ground black pepper, to taste
Salad:
2 cups cooked turkey breast, chopped or shredded
1 granny smith apple, diced
1 ½ cups celery, diced
1/4 cup raisins
1/4 cup walnuts or pecans, chopped
1 cup endive and radicchio, chopped (optional)
Directions:
In a bowl, whisk together yogurt, mayo, honey, lemon juice, curry powder, cumin, oil and salt and pepper. Taste and adjust seasoning, if necessary.
In a large salad bowl, combine turkey, apples, celery, raisins and walnuts and endive/radicchio if using. Add dressing, toss together and serve.
