Mexican Shrimp Cocktail

Ingredients:

1 – 1.5# cooked Shrimp
Old Bay Seasoning
1 cup diced Avocado
1 cup diced seeded Cucumbers (optional)
1/3 cup Red Onion (chopped)
2 Roma Tomatoes (chopped)
1 Jalapeno finely diced (remove seeds)
1 bunch chopped Cilantro
¼ cup Lime Juice
1.5 cups Clamato Juice (Chilled)
½ cup Ketchup (Chilled, some like more)
Hot Sauce to taste (1-2 Tablespoons)
Salt & Pepper to taste (each)
Lime Wedges for garnish

Directions:

Cook shrimp in Old Bay seasoning or lightly coat cooked shrimp with seasoning and chill for an hour before making. In a large bowl place seasoned shrimp, red onion, cucumber, jalapeno and cilantro (Add avocado if serving immediately)

In a smaller bowl whisk lime juice, Clamato Juice, ketchup, hot sauce, salt and pepper

Pour sauce over shrimp mixture and toss. Cover and refrigerate for up to approximately 6 hours. Just before serving add diced avocados. Garnish with lime wedges. Great with tortilla chips or saltine crackers!

Shrimp Tarts

Ingredients:

2 boxes Mini Phyllo Tart Shells (1.9oz each)
8oz Cream Cheese
1.5 teaspoons Worcestershire Sauce
2 teaspoons grated Onion
1 teaspoon Garlic Salt
¼ teaspoon Lemon Juice
½ cup Cocktail Sauce
30 Peeled and deveined Shrimp (31-40ct)
Fresh Parsley & lemon for garnish

Directions:

Beat first five ingredients until well mixed. Spoon some into each baked shell. Top with cocktail sauce and a shrimp

Garnish with chopped fresh Parsley. Place on serving platter along with lemon wedges.
