VEGGIE BREAKFAST TACOS
• 1 Tbsp. olive oil
• 1 package Rooster & Lark Rocky Mountain Skillet (frozen, do not thaw)
• 8 eggs, beaten
• 8 corn tortillas, warmed
• Optional toppings: diced avocado, crumbled feta cheese, salsa, parsley, hot sauce
In a large nonstick skillet, heat oil over medium heat. Pour package of Rooster & Lark into pan and stir 3-5 minutes until vegetables are tender.
Add eggs to skillet. Stir until eggs have set.
Serve egg mixture in tortillas with optional toppings.
